Delectable Chicken Curry

      Serves 6


Add 12 oz. Bombay Brand Curry Sauce

1 small onion finely chopped

1 tsp peanut butter or almond butter (optional)

2 tbsp ground dried unsweetened coconut

(you can use unsweetened coconut flakes if you are unable to access an Indian Grocery Store)

6 chicken thighs, skinless, boneless.  Cut each thigh into three pieces.

1 large potato, peeled and cut into quarters.



Puree onion, peanut or almond butter and unsweetened ground coconut in a blender until a paste is formed.

Saute this paste in a cooking pot on medium heat  in 1 tbsp of any oil of your preference or ghee (clarified butter) until it is well roasted for about 5 minutes.

Add the jar of Bombay Brand Curry Sauce and bring to a boil.  Turn down to simmer in 12 oz. of this delicious sauce and add the cubed chicken thighs and potatoes.  Cook until chicken is done.

Garnish with cilantro leaves and serve over Basmati Rice.  Serve with any of our Bombay Brand signature Chutneys or Pickles.
