Bombay Scallion Bites

      Serves 6

  • 1-1/2 cups softened cream cheese
  • 3 tablespoons of Bombay Eggplant Relish
  • 2 bunches of scallions
  • cilantro, chopped very fine
  • Deli style sliced chicken (or turkey breast)
  • Clean scallions, trim green part to 3".
  • Mix cream cheese with Bombay Eggplant Relish. Chill in refrigerator until firm.
  • Spread the cream cheese mixture on the chicken slices and cut into 1" strips. Sprinkle with a little bit of chopped cilantro.
  • Wrap the bulb end of each scallion with the chicken strips already spread with cream cheese mixture.
  • Arrange on serving plate and chill again until ready to be served.
  • The scallion green end makes a nice utensil to hold as you take a bite of the bulb end
